That’s our principle: making everything from scratch and using as much rescued produce as we can. We also like to keep things simple, so you won’t find artificial preservatives, gels or unnecessary additives in our jars.

Even as a kid, throwing out leftover food just wasn’t a thing in our house. We were encouraged to get creative with what we had, and over the years, our family dined on some weird and wonderful dishes made from ingredients others might have tossed.

When I trained as a chef, I became even more aware of the challenges of feeding our growing global population. It’s staggering to think that while 10% of people live in poverty, a whopping 30% of all food produced ends up as waste. With a passion for sustainability and a love of seasonal, locally sourced ingredients, I decided to do something about it. And that’s how Preservation was born. Now, I create a delicious range of jams, jellies, and pickles – perfect for enjoying now or saving for later!
